You can assemble the dough by hand and knead by hand. It’s fun and relaxing. Or you can use the electric mixer with a dough hook. The dough can also be assembled in a food processor, in which case some meditative hand kneading would not be a bad idea.
I use the sponge method as I find it relatively foolproof. This gives the yeast a head start.
