This pizza is the ideal cocktail party snack as its Piemontese flavors are so harmonious with wine. While most pizza is best when piping hot, this can be served warm or at room temperature because it is not too cheesy. You can prepare this ahead and warm it just slightly before serving.
Melt the butter in a heavy-bottomed wide sauté pan or skillet over low heat. Add the onions and cook slowly, stirring occasionally, until they are quite soft, golden brown, and reduced. This could take as long as 30 minutes. Be patient; the sweeter the onions, the better the pizza. Season to taste with salt and pepper and set aside to drain.
