This soup is a most amazing shocking pink. It tastes sweet, with a little tart undertone from the fruit-based vinegar. This is a perfect way to display the earthy sweetness of beets. Occasionally, however, they can taste “dirty” and there is nothing you can do to make the soup right. Taste the beets first before puréeing the soup just to be on the safe side.
