Herbal marinades are a strong tradition in peasant cooking all over the Mediterranean where the cooks don’t spend time worrying about innovation in cuisine. They use whatever fresh ingredients they have on hand. In Italy. France, Greece, Turkey, Spain, and North Africa, fish is rubbed with oil and fresh herbs and grilled over a wood fire. This is one of those idiotically simple “peasant” recipes, ideal for an outdoor barbecue where everything tastes better and more interesting. Must be the
