You’ve probably tasted this classic Sicilian sauce many times before. You just didn’t know what it was called. It’s usually drizzled on swordfish or tuna. Salmoriglio, also known as salmorigano, is also a good marinade for a roast pork loin. Rub the meat with a paste of garlic and oregano, baste with the sauce while cooking, and spoon a little on afterward. Great with broccoli with olives and toasted bread crumbs, and roast potatoes.
