  • Peanut oil, for deep-frying, or 4 tablespoons butter plus 4 tablespoons oil for sautéing

If deep-frying, heat 3 inches peanut oil to 350 degrees in a deep pan. Drop in onion slices and cook until dark golden brown, 4 to 5 minutes. Or sauté over medium-high heat, stirring occasionally, until brown. It is important that the onions fry until dark brown and slightly crisp.
