Picadillo is a classic Latin American dish of ground meat, tomatoes, garlic, onions, spices, olives, raisins, and capers. This hash–like mixture is often stuffed into roast chicken, tortillas, chayote squash, and other such convenient containers. In Cuba it’s served over rice and black beans. Without the meat, the mixture is still very exciting and makes a wonderful sauce for swordfish, cod, flounder, and tuna.
