Here’s another interpretation of the sweet and sour onion theme. This French-inspired recipe plumps the currants in Cognac and adds the perfume of cinnamon and nutmeg to the onions instead of citrus zest. It’s especially good with a leafy green vegetable such as spinach.

Incidentally, this aromatic onion-currant mixture is great with sautéed calf’s liver or chicken livers.
