Nut-based sauces are a specialty of the Italian province of Liguria. This simple sauce for fish, using toasted pistachios, is a beautiful pale green and looks wonderful on the pink of the salmon. Tastes good, too. As a variation, try some orange juice or zest in the sauce in addition to the lemon. Serve with rice pilaf and asparagus, broccoli, or spinach.
