The name of this dish is a little inside joke. When I was chef at the Chez Panisse Café, I was supposed to cook only French and Italian food. One day I had a craving for Japanese-style salmon with ginger and soy. To get around the geographical limitations of the menu. I wrote the name in Italian. Everyone loves the dish, and no one has ever questioned the lunacy of the label. Serve with green onion rice, spinach, snap peas, bok choy, or asparagus.
