While the Chinese do not grill chicken, they do make very tasty stir-fried chicken seasoned with ginger, dried orange or tangerine peel, five-spice powder, and hot pepper flakes. As it turns out, these flavors also make a dynamite marinade for broiled birds: The chickens emerge from the grill smoky, spicy, and aromatic. They can marinate for one or two days, but no longer as the ginger is corrosive and this chicken will “cook” without cooking. You can make your own five-spice mixture or buy it at a market that carries Chinese condiments. (Don’t confuse these five with the classic French “quatre épices.”)
