While the Chinese do not grill chicken, they do make very tasty stir-fried chicken seasoned with ginger, dried orange or tangerine peel, five-spice powder, and hot pepper flakes. As it turns out, these flavors also make a dynamite marinade for broiled birds: The chickens emerge from the grill smoky, spicy, and aromatic.
