While this recipe was passed on to me by an Iranian friend, I have seen versions of this dish in cookbooks from the Caucasus. Some variations of this recipe use saffron instead of paprika; others use no herbs at all. Although most recipes for chicken kebabs specify boneless and skinless cubed chicken breasts, these are easily overcooked and toughened on the grill.
