  • 8 ounces ( cups) pitted prunes
  • 2 tablespoons red wine vinegar



Cover the prunes with cups water and the vinegar in a small saucepan and soak for 30 minutes. Bring to a simmer over low heat, cover, and cook the prunes until tender, about 30 minutes. Add the lemon zest during the last few minutes of cooking. Purée the prunes with the cooking l
