Here’s a late autumn and winter duck recipe, when peaches are but a memory. I know this seems like a strange thing to say, but this duck dish is sexy. Something happens when the chestnuts poach in the ginger pear syrup and the two flavors intermingle. It’s incredibly voluptuous, but this is not an X-rated duck. You can serve it to friends and family as well as lovers.
