I love combinations that are hot, sweet, and tart. The heat of the fresh ginger and red pepper, the pungency of the curry and cloves, the tartness of citrus, and the sweetness of honey combine in a balanced and complex sauce for duck. A piquant fruit-based chutney is a nice addition to the plate, but is not required for taste satisfaction.
