Portuguese cuisine is not very spicy, unless it includes piri piri hot sauce made with incendiary African chilies. This traditional pork roast is subtly flavored with cumin, lemon, and cilantro. I like to serve it with orange segments mixed with olives, roast or fried potatoes that have been sprinkled with cumin and chopped cilantro, and sautéed greens with toasted bread crumbs, a traditional Portuguese vegetable.
