Method

Procedure

Combine all the marinade ingredients and pour over the meat in a nonaluminum container. Cover and let stand 2 hours at room temperature for the steaks, or 4 to 6 hours for the tenderloin. (Do not over marinate—the ginger will eventually begin to break down the meat.)
