Skordalia is a traditional Greek sauce to accompany vegetables or cooked fish. It is essentially glorified mashed potatoes enriched with garlic and olive oil but minus butter and cream. I like it thicker than it is traditionally made and often serve it as a potato dish with grilled fish sauced with tomato and seasoned with oregano or dill, or with fish baked on a bed of onions and tomatoes.
