Basic Vinaigrette for Green Salads

Your middle-of-the-road vinaigrette. Good for most lettuces. The balsamic vinegar adds a smoothness and depth of flavor that cuts the tart acid of the regular wine vinegar.

Ingredients

  • cup virgin olive oil
  • cup mild, pure olive oil such as Sasso
  • 3 tablespoons red wine vinegar
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon Dijon mustard
  • Salt and freshly ground pepper to taste

Method

Procedure

Whisk or process together all the ingredients in a bowl or blender. You may add chopped herbs or a minced clove of garlic, if you like. Season with salt and pepper to taste.
