It’s not really guacamole but close. This is an ideal dip for fried potatoes, and a dollop of this will perk up grilled fish, flank steak, or black bean soup.

  • 1 large ripe avocado, cut into ½-inch dice
  • 2 plum tomatoes, peeled, seeded, cut into ½-inch dice, fresh or canned
  • 2 tablespoons

Combine all of the ingredients in a bowl and mix carefully with a spoon. You don’t want to mash the avocado too much.
