A lot of people only encounter a turkey wing when they carve it off the whole bird on Thanksgiving. That’s a shame because there is a ton of potential with this bird part. The turkey wing is usually broken down at the joints of the wing to create a drumette (closest to the body), a “flat,” which looks like an overlarge chicken wing, and the wing tip, which is used less often.
