When I reimagine a bar-snack favorite, I like to really reimagine it. I use Brie in this version of poppers because it melts super creamy and offers a richer, edgier flavor with a little tang to it. Thanks to the thinness of the slices, the crispy prosciutto creates a subtle, salty shell that does the popper proud. This is perfect for any cookout table, but is easy enough to whip up for a weeknight snack or dinner party appetizer (or make a whole meal out of them!).
