Rum and Raisin Brownie Sorte

The inspiration for this dessert came from a holiday to Bali where a wonderful chef called Penny taught cooking classes in a hut in a rice paddy field! It was a magical experience. In her restaurant at our hotel she served a dessert of whipped cream chocolate brownies and rum-soaked raisins – so delicious we ate it nearly every evening. Using ready-made brownies means this dessert requires minimal effort and yet the result is a rich and indulgent rum truffle cake.
