Pineapple and Coffee Truffle Cake

This truffle cake may sound an unusual combination but you are going to have to trust me that pineapple, coffee and chocolate go well together. This cake contains one of my favourite naughty treats – marshmallow teacakes! They hold their domed shape in the dessert and so make an attractive contrast of white marshmallow nestling in the dark truffle ganache. Fresh pineapple has more flavour than tinned so use this if you are able to.
