This bread is our homage to the rustic country bread of Puglia (the southeastern tip of Italy). It’s coated in a bit of our coarse-ground cornmeal and has a beautiful open, diaphanous crumb full of big, irregular holes. Although it is made up of some of the simplest ingredients that exist, its high hydration and long bulk fermentation give it a surprisingly complex flavor and glistening, moist crumb.
