This soup has been a Thursday standard in our shop for at least a decade. It’s been so long that none of us can remember exactly when we started to make it. Whether summer or winter, it seems to satisfy. Its distinctive flavor comes from well-chosen beer, Cheddar cheese, and sherry vinegar. A less familiar ingredient to home cooks is Marash pepper. Marash peppers hail from Turkey and can be used fresh or dried and ground. The dried version is fruity and earthy in flavor and has a medium hea
