Spelt is a species of wheat, a variety that pre-dates the modern wheat that gives us Bread, All-Purpose and Cake flours. With a pedigree dating from 4,000 BCE, Spelt takes its rightful place among a category of cereals called Ancient Grains. This group includes Kamut (Ka moot), Barley, and Quinoa (Keen wa).

In its whole form, grains of Spelt are called Spelt Berries. Grind Whole Spelt Berries and you get Spelt Flour. Compared to Bread Flour,
