Normally naan is baked in a tandoor, an Indian oven shaped like a beehive. Since these ovens are seldom part of an American home kitchen, I have adapted the recipe to bake the bread on a griddle or sauté pan, or on an outdoor gas or charcoal grill.

I learned to make naan from Mohammed Hussein, the bread expert at Danny Meyer’s Indian fusion restaurant, Tabla, in Manhattan.
