The addition of butter and cream to the dough makes these honey cakes very delicate. They are a modem take on cookies that are medieval in origin. These make perfect Christmas cookies.

Ingredients

Dough

  • 4 cups unbleached all-purpose flour (spoon flour into dry-measure cup and level off)
  • 1 teaspoon baking soda

Method

  1. Set racks in the upper and lower thirds of the oven and preheat to 350 degrees.
  2. For the dough, mix the flour with the baking soda and spices in a large bowl and set aside.
  3. Bring the honey, brown sugar, and butter to a boil over medium heat, s
