These are a Swiss and Alsatian classic. A sponge batter is piped out in flat disks, which are then covered with sugar and allowed to dry, making a sparkling crust on the outside of the cookies after they are baked.

Ingredients

  • 4 large eggs
  • 2 egg yolks
  • cups sugar

Method

  1. Half-fill a medium saucepan with water and bring it to a boil over medium heat.
  2. Meanwhile, whisk the eggs, yolks, and sugar together by hand in the bowl of an electric mixer. When the water is boiling, place the bowl over the pan of boiling water and whisk gently to warm the egg mixture to about 110 degrees. It should feel just lukewarm if you plunge in your fi
