This delicious, easy-to-prepare Greek cake comes from my friend and colleague of many years Michelle Tampakis. Both her family and her husband’s are from Greece, where cakes of this type are popular. The recipe originated with a friend of Michelle’s who was born in Sparta. Michelle also helped me with some of the filo pastries that appear in Chapter 7.<
