St. Gallen is a lovely small city in eastern Switzerland, well known for its great architectural monument, the Benedictine monastery of Saint Gall. An enterprising baker must have invented this specialty in honor of the monastery. Klostertorte is like a chocolate version of a linzertorte, with a cocoa-and-nut dough that encloses a filling of raspberry jam. You’ll have some scraps of dough left over after you prepare the Klostertorte. Roll them to a square a
