The Engadin is a part of canton Graubuenden, well known for St. Moritz, a ski resort filled with grand, palatial luxury hotels and elegant restaurants. During the nineteenth century, before the creation of the great resorts, rural villages in the Engadin saw the emergence of a generation of pastry cooks who emigrated to every part of the world to open Swiss pastry shops. Many of the greatest names in pastry in Italy, such as Caflisch, Caviezel, Planta, and Sandri, owe their
