The Cape Malay community is composed of the mostly Muslim descendants of inhabitants of the island of Java who were brought to Cape Town as slaves in the seventeenth century. They are not from Malaysia but were dubbed Malay because they speak the Malay language. Bobotie, a kind of baked ground beef curry covered with a custard, is a classic Cape Malay dish. It is usually presented in a gratin or some other baking dish. I tasted several versions in Cape Town, the best of which was prepared b
