There is a difference between gâteau des rois, or “kings cake,” and galette des rois. The gâteau is usually made from a sweet yeast-risen dough, but the galette is made from puff pastry, sometimes a puff pastry enriched with milk at the initial mixing. The recipe here uses an almond filling and is a traditional Parisian galette. The Feast of the Three Kings, celebrated on January 6, commemorates the arrival of the Magi bearing gifts for the newborn Christ. In many countries, it is the day o
