This recipe is just one of dozens of variations on caramelized puff pastry. The dough is rolled out in a large quantity of sugar so that while it is baking, the sugar caramelizes and combines with the buttery dough to make an utterly delicious pastry. This recipe is a good way of using up puff pastry scraps. Just bunch the scraps together and wrap and refrigerate them overnight before attempting to use them.
