Name: Battenberg Cake
Yield: Serves 8
Ingredients: 175 g self-raising flour; ½ tsp baking powder; 175 g white caster sugar; 3 eggs, lightly beaten; 1 tsp vanilla extract; 1 or 2 tbsp milk, if needed; a little pink (or red) food colour; 175 g unsalted butter, softened, plus more for the tin; icing sugar, to dust; 4 tbsp apricot jam; 250 g yellow marzipan (or natural if you prefer)

This is serious retro territory! Reminiscent of our childhoods (when it came from a packet), it is said to have been created for the marriage of Queen Victoria’s granddaughter to Prince Louis of Battenberg in 1884. Each square represents one of the 4 Battenberg princes: Louis, Alexander, Henry and Francis Joseph. It is exceptionally pretty and beats anything you can buy hands down.
