Big Cakes: Vegan Fruit Cake

For all the vegans, those with allergies to dairy products or indeed anyone wanting a speedy, delicious fruit cake, this is for you. It contains neither eggs nor butter, has very little added sugar, is packed with moist fruit and roasted nuts, then laced with rum. The recipe was originally devised for Sir Paul McCartney at Christmas.
