Big Cakes: Exotic Fruit Chewy Meringue

A crisp meringue with a soft marshmallowy centre, lavishly topped with a tangy lemon and passion fruit cream and winter fruits. Here we photographed just a 25cm single disc, which would need exactly half the ingredients given and serve 6.
