This is the cake to celebrate high summer, when the days are long, the sun is high in the sky and the scent of fresh-mown grass is in the air. Summoning up memories of lazy afternoon teas in the garden, and adorned with full-blown crystallised roses, it’s a magical cake.
Invert the cake on to a cake stand or plate, so that the flat base forms the top surface.
Sift the icing sugar into a bowl and gradually add the orange juice, mixing all the time until it is thick enough to coat the back of the spoon. Pour over the cake, letting it drizzle down the sides.
