Method
Coat the loaf pans with a light film of fat and flour.
Sift together the flour, baking powder, baking soda, and salt.
Peel and purée the bananas with the lemon juice.
Combine the banana purée, sugar, eggs, and oil and mix with the paddle attachment on medium speed until blended. Scrape down the bowl as needed.
Add the sifted dry in
