  1. Melt the chocolate and the butter together in a bowl over a pan of barely simmering water. Add 1 oz/30 g of the sugar and mix to combine. Reserve.
  2. Whip the yolks and the water to full volume.
  3. Whip the whites until frothy. Stream in the remaining 1½ oz/40 g sugar and continue to whip to medium peaks.
