  1. Line a sheet pan with parchment paper. Trace twelve 3½-in/9-cm rounds on the paper and turn the paper over to avoid contact between the pen or marker and the batter.
  2. Sift together the confectioners’ sugar, bread flour, and almond flour.
  3. Whip the egg whites with the whip attachment on medium speed until frothy. Gradually add the granulated sugar while
