  1. Line sheet pans with parchment paper.
  2. Sift together the bread flour, pastry flour, and salt.
  3. Mix the butter and cream cheese with the paddle attachment on medium speed until smooth, 5 minutes. On low speed, mix in the sifted dry ingredients until just combined. Scrape down the bowl as necessary to blend evenly.
