Method

  1. Line sheet pans with parchment paper.
  2. Divide the dough into four equal pieces, wrap each tightly in plastic wrap, and refrigerate for several hours, until firm enough to roll out.
  3. Working with one piece of the dough at a time, roll out the dough on a lightly floured work surface to ⅛ in/0.3 cm thick. Using a 1½-in/4-cm fluted cutter, cut out rounds of
