Method

  1. Melt the cocoa butter and pour into a blender. Begin on low speed and blend together the cocoa butter, sugar, and sablé crumbs.
  2. Once the mixture has become a homogeneous purée stream in the oil and blend for 1 minute.
  3. Place the mixture in a mixing bowl and refrigerate until completely set, about 3 hours.
  4. Once the mixture has set, mix with th
