Method

  1. Line sheet pans with parchment paper.
  2. Grind the walnuts to a fine meal with 1¾ oz/50 g of the sugar in a food processor.
  3. Cream the butter, the remaining 3¼ oz/90 g sugar, the vanilla, and rum with the paddle attachment on medium speed until light and smooth, 5 to 6 minutes. Scrape down the bowl as needed. On low speed, mix in the flour and ground nuts
