Method

  1. Line sheet pans with parchment paper.
  2. Blend the almond paste with 1 oz/30 g of the egg whites (about one white) with the paddle attachment on low speed until smooth. Add the butter, sugar, and salt and cream together on medium speed until light and fluffy, 5 minutes. Add the remaining 6 oz/170 g egg whites, the rum, and vanilla and mix until completely blended.
