Method

  1. Line a sheet pan with parchment paper. Fit a piping bag with a #3 tip. Line three full sheet pans with silicone mats.
  2. Place the almond flour on the parchment-lined sheet pan and dry out in a 200°F/93°C oven for 15 minutes.
  3. Process the almond flour, cocoa, and one-third of the confectioners’ sugar in a food processor until finely ground, 1 to 2 minutes
