Method
- Line two sheet pans with silicone baking mats.
- Combine the maple sugar and egg whites and whisk to stiff peaks.
- Add the confectioners’ sugar and blend just until smooth. Spread to the desired thickness, but in a thin, even layer on the prepared pans.
- Dry in a 150°F/66°C oven overnight.
- Store in an airtight container.
