Maple sugar

Method

  1. Line two sheet pans with silicone baking mats.
  2. Combine the maple sugar and egg whites and whisk to stiff peaks.
  3. Add the confectioners’ sugar and blend just until smooth. Spread to the desired thickness, but in a thin, even layer on the prepared pans.
  4. Dry in a 150°F/66°C oven overnight.
  5. Store in an airtight container.
